2004 SEMILLON (SOLD OUT) 100% Semillon from
Rosebud Ranches in Mattawa, Washington. Barrel fermented to completely dry over
a course of 6 months in 1-year-old French burgundy barrels. After cold
stabilization, it was run through a complex filtration system to finish this
crisp and lively wine. The citrus bouquet gives way to a crisp and elegant wine
with a slightly buttery aftertaste. This wine pairs well with many delicate fish

Society 2005 SEMILLON A blend of 90% Semillon from Rosebud and Stillwater vineyards completed with 10% Sauvignon Blanc from Klipsun Vineyard via Mathew’s Cellars. This barrel fermented wine was aged for 9 months in 50 % new oak to form a complex, rich and age worthy wine. The citrus bouquet gives way to a crisp and elegant wine with a slightly buttery aftertaste. This wine pairs well with creamy chicken, fish and poultry dishes accented with lemon and candied ginger. This barrel fermented wine was aged for 5 months in 20 % new American oak to form a complex, rich and age worthy wine. The pineapple, mango and citrus bouquet gives way to a crisp and elegant dry wine with just a hint of butter in the aftertaste which should develop over the next 2-3 years. This wine pairs well with slow roasted poultry, yet has the structure to stand up to foods such as spicy and exotic Thai or Indian dishes. Our 2008 Sauvignon Blanc began with fruit picked from Destiny Ridge Vineyards in the Horse Heaven Appellation. It was whole cluster pressed at Alexendria Nicole in Prosser, then transported to Woodinville as juice to begin the fermentation process in neutral Burgundy Oak barrels. As it developed, some was added to our Semillon but due to its exotic tropical bouquet, we retained a very limited quantity to bottle for our wine club. This is a smooth, balanced, dry, crisp Sauvignon Blanc with a delicate slight perfume bouquet of pineapples. This wine is unfiltered and unfined. It should pair well with light fish entrées such as sea bass with lemongrass and capers or seafood bisque, delicate cheeses such as mozzarella and fontina. Our first vintage of Rosé is a blend of 90% Merlot from Conner Lee completed with 10% Semillon from Rosebud & Stillwater vineyards. After 3 days of cold soaking, the Merlot began fermentation with the skins, to extract the beautiful rich burgundy color. The juice completed fermentation in the barrel, Semillon added, and then aged 3 months in neutral oak prior to bottling. Our frigid winter helped to cold stabilize this wine before it was bottled. The dark cherry bouquet blooms on the palate with a slight taste of citrus finish. Many will enjoy chilling this dry wine which pairs well with crisp garden greens tossed in a balsamic vinaigrette or light meals of cured meats and artisan cheeses on the deck or boat during a warm sunny afternoon. Our second vintage of Rosé is a blend of 90% Merlot from Conner Lee completed with 10% Semillon from Rosebud vineyard. After 3 days of cold soaking, the Merlot began fermentation with the skins, to extract the beautiful rich burgundy color. This wine pairs well with a tremendous variety of appetizers, cedar planked salmon, poultry dishes or just light foods on the deck or boat.Alcohol 14.5%, Production 48 cases, Retail $ 18.00/bottle, Club $ 15.30/bottle 2008 MERLOT ROSÉ (SOLD OUT!)Our very dry Rosé is a blend of 90% Merlot from Conner Lee completed with 10% Semillon from Rosebud Vineyard. We bleed off the “Saignee” from the Merlot must after allowing a short period of skin contact to extract the dark color and tannins. We then transferred this juice to neutral oak barrels where we began the slow fermentation lasting nearly 30 days. We then blended in our dry Semillon for an addition of crisp acidity to allow this wine to be enjoyed chilled. This wine was cold stabilized in January and bottled after 4 months in oak. The dark cherry bouquet blooms on the palate with a slight taste of citrus finish. This wine is crafted to drink chilled on a warm summer day. A blend of
Pepper Bridge and Seven Hills merlot, with a small amount of Pepper Bridge
cabernet sauvignon and Chelle den Pleasant cabernet franc for structure. This wine was aged
in French and American oaks, and is a forward, soft, supple and balanced wine.
The flavors include currant, cinnamon, cocoa, caramel and cherries. The wine is
ready now for meals of meats, pork and chicken, and should continue to improve
for at least 5 years. 2003 MERLOT (Half Bottles Only!) A blend of Conner Lee, Pepper Bridge and Seven Hills fruit provides intense fruit and backbone for this velvety, age worthy wine with a seemingly endless finish. French and American oaks add complexity and components to complete mushroom, gorgonzola & caramelized onion topped Kobe steaks, rich veal or pasta entrées. A freeze in early 2004 caused incredible shortages, particularly in Walla Walla, but allowed us to discover some new, wonderful vineyards including Sheridan in Yakima Valley and Candy Vineyard in the Tri cities area. Staying similar to our style of picking late in the season helping to extract ripe, complex flavors, this Merlot has the structure and tannins to age 10 + years gracefully. It shows the wonderful merlot traits of chocolate and berries, with a bit of candy bouquet.Alcohol 14.7%, Production 73 cases, Retail $ 25.00/bottle, Club $ 21.25/bottle 2006 MERLOT (SOLD OUT!) This Merlot is not subtle or shy. The grapes were from 20 year old Conner Lee Merlot (100%) vines and developed for 28 months in New American Oak. It is dark in color, bold and lush, with a bouquet of cedar, currants, and Asian spices. On the palate, you’ll find a velvety-texture with a quiet flavor of dark fruits, a splash of cocoa, earth and a vivid finish of blackberries and anise. This wine does not demand the company of food, but would compliment rich meat and chicken flavors, strong cheeses such as aged Gouda or cave aged Gruyere or dark chocolates. This wine combines 86 % cabernet franc from Chelle den Pleasant vineyards in the Yakima Valley with 14 % cabernet sauvignon from Conner Lee Vineyards near Othello. It was barrel aged for 18 months in new French and American oak barrels. This wine is medium plum-garnet in color, with flavors of raspberry, plum, violet and ground spices with scents of sweet oak and vanilla. The structure and balance ensures that this wine will compliment many pork, meat and hearty chicken dishes. “Somewhat in the same tight, austere, guarded mode as the winery’s Bordeaux blend, this cabernet franc breathes slowly into elegant complexity. Spicy, compact blue and red fruits are lightly accented with sweet spice” said Wine Enthusiast magazine; awarded 90 points.Alcohol 15.03%, Production 76 cases, Retail $ 20.00/bottle, Club $17.00/bottle 2006 Cabernet Franc (SOLD OUT!) Our Cabernet Franc begins with 85% Cabernet Franc from Chelle den Pleasant Vineyards (Dennis Pleasant) in the Yakima valley, blended with a 15% Old Vine Cabernet Sauvignon from Conner Lee vineyards near Othello. The wine was barrel aged for 20 months in new oak barrels. This wine is medium dark cherry in color, with flavors of raspberry and scents of blueberry, sweet oak and vanilla. This tightly knit wine pairs well with delicate meat dishes, pork with fruit chutneys, or rich poultry dishes with reduction wine sauces. Though elegant in flavor while young, we encourage you to cellar this wine and watch it develop over the next 4-6 years. Alcohol 14.3%, Production 74 cases, Retail $ 25.00/bottle, Club $ 21.25/bottle 2003 SYRAH (SOLD OUT!) 100 % Boushey fruit aged for 20 months in oak before bottling. This blockbuster wine from one of Washington’s finest vineyards began in new American oak for 4 months, and was then transferred to neutral oak barrels to insure the fruit characteristics are fully developed. Starting with a rich, warm and enticing bouquet, the wine exhibits flavors of vanilla, cherries, chocolate and spices, which linger on the palate almost indefinitely. “Though not as ripe or potent as the leading Boushey Vineyard Syrahs, this delicate wine is nicely balanced and reasonably complex, showing light pepper along with tart cherry- and berry-flavored fruit. There’s plenty of acid, but the fruit is ripe enough to avoid the sour-candy label,” said Wine Enthusiast magazine. (3 Bottle Limit) 2004 SYRAH This Syrah combines dark, rich and intense fruit from Destiny Ridge (in the new Horse Heaven appellation), and Dineen Vineyard (next to Sheridan) in the Yakima Valley. The combination of 50% new French oak, 16% New American Oak, and the balance neutral French oak structures this wine to cellar for many years. This big, compact, tight knit, multi layered wine shows hints of black pepper, soft leather and mocha, with blueberry on the finish. Because of its intensity, it will benefit from decanting and bottle aging. Consists of 57 %
cabernet sauvignon from Pepper Bridge and Porteus Vineyards, 32 % merlot from
Seven Hills and Milbrandt Vineyards, and 11 % cabernet franc from Chelle den Pleasant
vineyards. This wine spent 20 months in a combination of 72 % new American and
French oak, including such world-renowned barrel producers as Vicard, Sylvan,
Seguin Moreau and Nadelie. This is a rich, elegant, yet tightly compacted wine,
crafted for longevity yet approachable in its early years. It should continue to
develop well over the next 10 years. As the wine unfolds, aromas of cherries and
spice escort flavors such as cloves, vanilla, butterscotch and smoke. The wine
will compliment most meat, mushroom, and poultry dishes and should enhance the
complexities of the food. 2002 BORDEAUX BLEND A marriage of Walla Walla and Yakima fruit with Pepper Bridge merlot and cabernet sauvignon, Seven Hills merlot, Upland (old vine) cabernet sauvignon, and Chelle den Pleasant vineyards cabernet franc. The old vine flavors show through with this blend of 51% Cabernet Sauvignon, 36% Merlot, and 13% Cabernet Franc A combination of new and used oak barrels including Sylvan, Vicard, Radoux American & French and Seguin Moreau. “A mix of Walla Walla and Yakima grapes yields a rather austere wine with nuances of mineral, gravel, water over stone. A blend of Cabernet Sauvignon and Cabernet Franc. The challenges for Washington State in 2004 created some wonderful blending opportunities. Through the use of neutral oak barrels, we created a soft, fruit forward wine emphasizing the Cabernet flavors with soft mellow tannins. There is no need to wait long for this wine! This is a wine to enjoy with pizza, rich chicken dishes, or barbequed burgers.Alcohol 15.2%, Production 117 cases, Retail $ 20.00/bottle, Club $ 17.00/bottle 2005 SUNRISE BLEND A blend of Merlot, Cabernet Sauvignon, and Cabernet Franc. Emphasizing Merlot and neutral oak barrels helped create this lush, fruit forward easy sipping wine. Beginning with a slight butterscotch bouquet, this wine shows berry/cherry characteristics of the merlot fruit with light tannins and a hint of oak. Though the wine will benefit from several years of cellaring, it was crafted to enjoy while young.
